Summer Pasta

Today I'm giving you a gem of a recipe - so summery, so lemony - so utterly delish I make it incessantly! I call it my summer pasta - it's so faboosh I'd serve it to a maharajah! To make things even better it's a cinch to make - it takes 15 minutes to prepare for heavens sake! I like to serve this with a tangy sweet white wine - paired with a crusty baguette and good olive oil makes this meal decidedly divine!
2 boxes quinoa pasta cooked til al dente, then drained
the juice and zest of 2 fresh lemons
1/3 cup good olive oil
1/2 cup fresh basil chopped
1/2 cup fresh flat leaf parsley chopped
6 oz fresh mozzarella pieces
coarse salt and pepper to taste
add all ingredients to a large pasta bowl, toss + enjoy!

Hello! How many ounces of quinoa would I need? I buy it in bulk and I would love to make this recipe!
My dear Nakiya...for the recipe above you'd need 16 ounces, but please keep in mind this is quinoa PASTA, not plain quinoa!
